Everyone loves a good pancake.
Breakfast, lunch, dinner? Anytime.
Unfortunately, some pancakes aren't exactly the most "nutritious." Without realizing it, you can consume tons of calories, fat and sugar by just eating one serving of pancakes.
Don't worry. I'm here to help. I'm happy to say you wont have to give up pancakes. This recipe will fill you up and give you the energy you need to get through the day (or evening).
I actually came up with this recipe on my own when I started experimenting with wheat-free cooking. It's quick, easy and gluten free.

Protein Pancakes
2 Scoops Vanilla Protein Powder
1 Egg
1/4 Cup milk of choice (I use almond milk)
1 packet stevia
1 tsp baking soda
1 tsp baking powder
There can be so many modifications to this recipe. I sometimes add 2 tbsp peanut butter (if doing this mix really well), dark chocolate chips or strawberries. I usually top them with honey or 100% pure maple syrup and a spoonful of vanilla greek yogurt.
I hope you love them as much as I do. Let me know how yours turn out! :)
