My dad was actually the one to share this recipe with me. He knows my sweet tooth was killing me so he discovered the simplest PB cookie recipe. Ever.

3 Ingredient Peanut Butter Cookies
1 Cup Peanut Butter
1 Egg
1 Cup Sugar
Mix all ingredients together. Roll into small balls and flatten with fork. Place on lightly greased cookie sheet. Bake for 10 min at 375. Let cool and enjoy!

So simple and so delicious. Now there are a few ways to make your cookies healthier.
I recommend swapping regular peanut butter for natural and use stevia instead of refined white sugar.
Regardless of how they're made. You'll be in love after one bite. Enjoy but remember moderation is key ;)
