I am almost always busy. Between schoolwork, working out, having a social life, being involved on campus, etc. I barely have time to sleep!
Because of my schedule, I'm constantly finding great on-the-go snacks. My mom and I actually came up with this one. We had recently bought a HUGE bag of flaxseeds so we wanted to find different ways to use them.
This is what we got.
Flaxseed Protein Balls
1/2 cup flaxseed (ground flaxseed can also be used)
1 cup oatmeal
3/4 cup coconut
1 tsp vanilla
3/4 cup peanut butter
2 tbsps honey
Mix ingredients together in a large bowl. Roll into balls and place on a cookie sheet covered in parchment paper. Refrigerate for 15-20 mins. Enjoy!
Now, just a warning, they are very sticky to make! That's why they need to be refrigerated, so they can set. Refrigerating them after this is not necessary but depending on where they are stored, they may melt.
