The other day I was on Pinterest and stumbled upon a ton of yummy smoothie recipes by POPSUGAR. Along with the smoothies, they included a link to this recipe.. Banana Smoothie Muffins. At first I thought, "hmm, that would be so weird." So I decided to try them for myself and see just how weird they would be. I modified their recipe a bit and added a few things I thought would go great.
Ingredients
3 Ripe bananas
1 cup packed spinach
1 cup packed kale
8 strawberries
1 1/2 cups whole wheat flour
1/4 cup plus 2 tbsps stevia OR 3/4 cup sugar
1 egg
1/4 cup canola oil (I used olive oil)
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla

Method
Preheat your oven to 350 degrees. Blend the bananas, spinach, kale, strawberries and vanilla to make a smoothie mixture.

Next, combine the flour, sugar, baking powder, cinnamon, egg and oil. Then, add the smoothie mixture to the flour mixture and stir. Once combined, add the mixture to a greased muffin tin OR you can use the paper cups. Bake at 350 for 20-30 minutes or until a toothpick comes out clean. Allow muffins to cool and enjoy!
These muffins are super yummy and I promise.. you won't be able to taste the kale or spinach at all! They're just an added burst of nutrients. ;) Plus these muffins are only 150 calories! What could be better?! Enjoy them in the morning for breakfast or at any time of the day! Hope you're all having a great week (and I apologize for the lack of posts..)
